Molds? Yes, but only “noble rot”
Among the wines produced in the area of Orvieto, those known as “muffati” fall into a class all their own. When the grapes are attacked by a fungus, Botrytis Cinerea, or “botrysized”, they gradually shrivel, turn an amber color and are covered with mold. This dehydration increases the sugar content of the grape and the must therefore has a higher alcohol content. Not all varietals are suited to the development of this fungus. The grapes must have a rather thick skin and the cluster must be fairly open. The location of the vineyards also plays an important part for in order to develop botrytis requires an environment where humidity in the form of a light fog in the morning alternates with sunshine. The result is a wine with complex inviting aroma, sweet but not cloying. It is particularly suited as accompaniment to foie gras and herbed cheeses as well as being an ideal meditation wine.
