The building, formerly the convent of San Giovanni in the medieval heart of Orvieto, now serves as the headquarters of the Province of Terni for the valorization of the entire local wine and food chain. The presence of the CSF-Center for Professional Formation of the Province of Terni and the Università dei Sapori of Perugia make it a qualified center for professional training courses for aspiring cooks and barmen.
Modern kitchen facilities also make it possible to offer courses for “amateur” tourists and local groups interested in learning Umbrian cooking. The Palazzo del Gusto also hosts the Regional Enoteca or Wine Library of Umbria, the only public structure of this type in the region, which has always been an integral part of the patrimony of the Palazzo del Gusto in Orvieto, showcase for the 11 DOC and 2 DOCG Umbrian wines. Some of the projects proposed have been “Didactic Farms”, “Slow Sundays”, “Sensorial workshop for educating taste” for the schools, “The Masters of Taste” of the Province of Terni, exhibitions of artistic crafts, wine and food events such as Orvieto con Gusto, National Exhibit of White Truffles in Fabro, Wine Cellars and Chefs on Stage, Cittaslow Dinner Music, Umbria Jazz Winter.

The Palazzo del Gusto of Orvieto is today internationally known above all as the headquarters of Cittaslow, the network of 117 municipalities connected to Slow Food, spread throughout 16 different countries. Their interests are centered on economic and social “sustainability”, “cultural identity“, “a selective upgrading of the past together with the use of new technologies for urban quality and services to persons”, defense of “biodiversity”. The attention of national and international mass media and many university and research centers everywhere has been focused on Orvieto and its “developmental model” for years.
